Another "Rogue Post" coming at ya! This is again, a post based on something I happened to make one night for me and the hubby that a number of you guys requested the recipe for.
NOW! On to matters of business.
Bacon Wrapped Jalapeno Poppers. I'll give you a second to wipe the drool from your lip. The first time I made these was for our Super Bowl party this year (side note, has there been a more disappointing Super Bowl than this year's??). They were a hit with the family; especially the boys. Husband, J, has told me time and time again that THESE are now his new favorite thing I make. In fact he requests them on days when he is happy, when he's tired, or when he's just wanting good food. So basically every chance he gets, he mentions to me, "You know what I'm CRAVING?.... Those bacon jalapeno poppers. Can you make some?"
NOT TO MAKE YOU THINK THIS IS A MAN-ONLY-FOOD. This is something for everyone. I crave this. My girlfriends crave this. My mom craves this.
When I posted the photo above, quite a few of you ladies responded the way I did when I first learned about these beauties: "What ARE these and how fast can I make them?". So without further ado, I give you Bacon Wrapped Jalapeno Poppers!
Bacon Wrapped Jalapeno Poppers
Servings: 6 (2 poppers each)
Prep Time: 10 minutes
Total Time: 30 minutes
Ingredients:
12 fresh jalapenos
4 oz cream cheese (or Neufchatel cheese)
12 slices bacon, cut in half
2 Tbsp green onions
1/4 tsp black pepper
Dash of garlic powder
1. Preheat oven to 400 degrees. Rinse and cut tops of jalapeno peppers. Slice in half lengthwise and deseed. *Wear gloves when dealing with jalapenos*
2. Chop green onions. Combine with cream cheese, garlic powder, and black pepper. Mix thoroughly. Spoon into halved jalapenos. The cream cheese mixture will expand in oven, so you don't need to add a whole lot. Just add enough to fill the hollowed jalapeno to the rim.
3. Take one cheese stuffed jalapeno half and wrap half a slice of bacon around it. You may want to use toothpicks to secure bacon, as it will shrink and unwravel a bit while baking.
4. Place bacon wrapped popper on an oven safe cooling wrack, placed on top of aluminum foiled baking sheet. This will allow even baking/crisping and will keep the bacon grease from soaking the poppers as they cook. Bake for 20 minutes or until bacon is fully cooked.
5. Cool and enjoy!
