On to today's post! This is not a recipe that you guys pinned. *gasp* I've gone rogue. This is a recipe I happened to make on my own one day. I posted some photos on Facebook and Instagram (follow me on Instagram!), and quite a number of you contacted me looking for the recipe. So I bring you.... Three Ingredient Ice Cream!

There is no cream in this recipe. This is HEALTHY for you. Now before you go shutting me off, hear me out. I love food. No, I LOOOVE food. I am a huge fan of food with big taste and big flavor, which tends to be in the big calorie family. I want to take a bite of something and be hit in the face with how good it tastes. Ask my husband. My biggest complaint about certain foods and restaurants I don't like, is that it doesn't have enough flavor. This recipe satisfies my need for big taste. Also, you can eat this for breakfast and call it good. What more can you ask? Ice cream for breakfast? Pretty sure that completes your inner-child.
If you're anything like me, you are thinking "but doesn't it just taste like bananas?" I don't like bananas. That's right. I don't like 'em. The texture gets me. I can handle the flavor in small quantities, and that's what this recipe does. Of course there is a slight banana flavor. In my opinion, its the most potent fruit and its hard to escape the flavor when it's included in a recipe. But it's not an overwhelming flavor.
So how do we get from this...

Let's get going and I'll show you how! First you need your three ingredients.
Banana, peanut butter, and cocoa. If some of you have nut allergies, not to fret! The last two ingredients are optional! *WHAT???* So technically this can be a one ingredient ice cream recipe! Or you can mix and match anything you want in here. These were just the two that sounded the best to me, and tasted pretty darn good. I've seen some suggestions of coconut milk, and I'm curious to try that one. If you try it, let me know how it goes!
First you need to slice up the bananas. About 4 will make enough for 4+ servings, depending on how much or little you want at one time. You want to slice them up BEFORE you freeze them. It is so much easier and prettier, to be honest. My first thought was to use the bananas already in my freezer that I usually save for banana bread. But once I brought them out I realized that was a bad plan. Buy some new ones. But make sure they're ripe!
Place them on a plate in as thin a layer as you can. I made the mistake of putting them in a bowl and that greatly affected the freezing time. The ones on top were perfect after about 1 hour, but the middle and bottom took about 3 hours to freeze.
Once frozen, place them all in a food processor and go! First it will be gravel-y and you'll think you did it wrong. Keep going. Then it will turn into a big lump and you'll swear to never step foot in the kitchen again. Keep going. THEN the angels sing and it starts turning into a nice, creamy texture.
This is when you add your mixin's. I added about 2 Tablespoons of peanut butter, and 2 teaspoons of cocoa powder. As I said before you can put in as much or as little of each as you want. Make this your own! You'll need to scrape the sides a bit to get it all incorporated.
And voila! You're done! You can either eat it straight from the processor, or put it in a freezer safe container and let it set a bit. I suggest the latter so it gets nice and cold again.
When its set, you'll be left with yummy ice cream! My serving suggestion if you are making it with the ingredients we talked about: add a strawberry before you serve it. It complements the existing flavors so well and just makes it PERFECT.
So moral of the story is, make this. That's it. The end.
